Dinner tonight is a treat just because I deserve it! It is not that bad: lean beef, reduced-fat cheese, radishes with a light labneh sauce and a basil/parsley salad. Happy Friday!
Starting a 13 bean soup. I bought this mix from Bob’s Red Mill at $5 and it will give me about 8 big portions of soup. You can definitely make your own mix because dry beans don’t go bad. This one has black eye peas, black beans, green and yellow peas, brown and red lentils, navy and canellini white beans, pinto and small red beans, garbanzos, lima and baby lima beans.
I’ll soak this overnight and then add onions, garlic, bits of turkey bacon, a can of crushed tomatoes, a tsp of chili flakes, salt and pepper. Let it simmer for about 2 hours putting more water or vegetable stock every 20 minutes because the beans will soak a lot of the water. Results tomorrow! license128
